I’m a total sucker for an easy, healthy dessert recipe. Especially now that Asher is partaking in sweets, I want to control the ingredients that he is ingesting, at least while I can.
I came across this fun recipe for “Stress-Relieving Lavender Nice Cream.” YES PLEASE.
Anytime you are around lavender, don’t you want to take a deep breath immediately? Without realizing, you’re already on your path to relaxation. Lavender is known to counter inflammation, swelling, and pain, while also protecting against infection. Pretty cool.
When making this ice cream, I made a few edits to the original recipe.
Updated Ingredients List:
- 3 1/3 cups (2 cans) coconut milk (I used normal, not light)
- 1 and 1/2 tablespoons dried culinary lavender (do NOT use oil)
- 3/4 cup frozen organic blueberries
- 2/3 cup maple syrup
- 1/4 teaspoon vanilla
