Bee Pollen Muffins

Here comes another batch of super yummy and energy filled morning muffins–recipe below! Today features my favorite ingredient, BEE POLLEN! Bee Pollen has MOREĀ protein than any animal source šŸ’„. I know, crazy right?! And it’s a much healthier and a safer form of taking protein! For all my athletic friends and those that love to get moving, you will LOVE bee pollen! Add it to anything–smoothies, muffins, cereal.

  • 1 Cup Gluten-Free Oat Bran
  • 1 1/2 Cups Coconut Flour
  • 1/2 cup Rolled Oats
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1 Cup Almond Milk
  • 1/2 Cup molasses or Honey
  • 3/4 cup applesauce
  • 1/4 cup chopped nuts
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tblsp. Coconut Oil
  • 2 eggs, beaten (or flax eggs)
  • 1/4 cup ginger, fresh Grated
  • 1/4 – 1/2 cup Bee Pollen
  • Bake at 400 degrees for 15-20 minutes

Heal+Thy Woman Project was born when she realized the immense necessity and lack-there-of in women's health and education. For months she wanted to find a new word for "healthy"--being that "healthy" has lost its value in the every-day. She woke up one morning realizing her life's passion is in the word "healthy"-- "Heal Thy". She believes that to be truly healthy we must first heal. She explains it in this way, "to have a healthy gut we must first "heal thy" gut".
