Veggie & Root Soup

There are so many roots and veggies out there. Most unknown–the benefits and uses. When it comes to Burdock it isn’t just “healthy,” it’s freaking medicinal. It’s a force of nature that rehabilitates the liver! The health of our liver is so crucial for our entire body! If you’re wanting to cleanse your body, mind, and soul, bring Burdock to your life and feel the magic! Uses: drink Burdock tea, juice the Burdock root, munch on it like you would carrots, make a rice, or make a medicinal soup that gently hugs your whole body! 

INGREDIENTS

  • 4 cups sliced Burdock root
  • 4 cups sliced carrots
  • 4 cups sliced mushrooms
  • 4 cups sliced bok chop
  • 1 large yellow onion, diced
  • 3T minced garlic
  • 3T grated ginger
  • Handful fresh lemon thyme
  • 1 teaspoon sea salt
  • 1 quart veggie broth
  • 1 cup Spring Water

DIRECTIONS

  1. Place all ingredients (minus thyme) in a large pot.
  2. Cover the pot and bring to a boil.
  3. Reduce heat and simmer for 20-30minutes.
  4. Blend all ingredients, or not.
  5. Serve and top with Lemon Thyme and enjoy!

Desiree Gutierrez, the founder of Health ReMynted and Heal+Thy Woman Project, is a passionate holistic nutrition & wellness expert with an art in creating delicious, functional, and healing recipes. Desiree extended her nutrition education at The Institute for Integrative Nutrition where Health ReMynted was born simply means “renewing one’s health.” She has been lovingly coaching and educating others on intentional eating and overall wellness in order to renew and live our best life! She does extensive work with those suffering from specific-related diseases, hormone imbalances, anxiety, and depression. Her goal is to help guide people in understanding balance and what it means to eat and live intentionally for pure bliss, all while our bodies heal and flourish!

Heal+Thy Woman Project was born when she realized the immense necessity and lack-there-of in women’s health and education. For months she wanted to find a new word for “healthy”–being that “healthy” has lost its value in the every-day. She woke up one morning realizing her life’s passion is in the word “healthy”– “Heal Thy”. She believes that to be truly healthy we must first heal. She explains it in this way, “to have a healthy gut we must first “heal thy” gut”. Heal+ Thy Woman Project has become her sole focus to guide women thru healing and becoming more connected with their own beautiful bodies!
