I appreciate the beauty of “Instagram-worthy” healthy dishes, but what good do they do if they’re overwhelming to make and people just look at them? I love and am committed to creating functional, intentional, EASY-to-recreate, HEALTHY recipes so everyone can feel the goodness.
In the potato section, you may see purple sweet potatoes looking ones, yup, pick one up! PURPLE SWEET POTATOES are loaded with vitamin C and vitamin A, and are super high in antioxidants that help guard against cardiovascular disease and cancer! They improve blood sugar levels which help you keep going naturally! If you’re an endurance athlete and runner you’ll want to add these to your diet! Even if you’re not, like me, still add them!
- 1 purple sweet potato
- 1 bunch of curly parsley
- Juice of 1 lemon
- 2-3T Olive Oil
- 1/4 cup diced red onion
- 1/4 tsp white pepper
- dash of sea salt
- In a small pot, cut the potato in 1/2 and cover it with water and start boiling it.
- Once you can easily poke a fork thru it, about 10min or so, take it out and place in a bowl. Start mashing using your fork.
- Drizzle Olive Oil (as much as you like), add a handful of parsley, red onions, lemon juice, sea salt, and white pepper. Add more of any of these ingredients that you love!
- ENJOY! They’re even delicious chilled. And here you’ve got an amazing healthy, energy-fueling, cancer fighting meal!
