Purple Sweet Potato Salad

Real Life, real color! I believe in the power of intentional living, eating, moving, loving…connection within oneself and with others. I also believe that real, good, healthy, healing food should be accessible to ALL! I appreciate the beauty of “Instagram-worthy” healthy dishes, but what good do they do if they’re overwhelming to make and people just look at them? I love and am committed to creating functional, intentional, EASY-to-recreate, HEALTHY recipes so everyone can feel the goodness.

In the potato section, you may see purple sweet potatoes looking ones, yup, pick one up! PURPLE SWEET POTATOES are loaded with vitamin C and vitamin A, and are super high in antioxidants that help guard against cardiovascular disease and cancer! They improve blood sugar levels which help you keep going naturally! If you’re an endurance athlete and runner you’ll want to add these to your diet! Even if you’re not, like me, still add them!

Ingredients:

  • 1 purple sweet potato
  • 1 bunch of curly parsley
  • Juice of 1 lemon
  • 2-3T Olive Oil
  • 1/4 cup diced red onion
  • 1/4 tsp white pepper
  • dash of sea salt

Directions:

  1. In a small pot, cut the potato in 1/2 and cover it with water and start boiling it.
  2. Once you can easily poke a fork thru it, about 10min or so, take it out and place in a bowl. Start mashing using your fork.
  3. Drizzle Olive Oil (as much as you like), add a handful of parsley, red onions, lemon juice, sea salt, and white pepper. Add more of any of these ingredients that you love!
  4. ENJOY! They’re even delicious chilled. And here you’ve got an amazing healthy, energy-fueling, cancer fighting meal!

Desiree Gutierrez, the founder of Health ReMynted and Heal+Thy Woman Project, is a passionate holistic nutrition & wellness expert with an art in creating delicious, functional, and healing recipes. Her love for nutrition and cooking started as a child, learning from watching her mother heal others thru food, herbs, music, and love. She realized at a very young age that food had purpose and function, and that’s where she dove into the “rabbit hole” of functional medicine. Desiree studied pre-med at The University of Texas and thru her course of studying, realized she wanted to turn her focus to nutritional health realizing how vital human health is to live a happy and fulfilling life. Being able to dance until old-age is her non-negotiable!

Desiree extended her nutrition education at The Institute for Integrative Nutrition where Health ReMynted was born simply means “renewing one’s health.” She has been lovingly coaching and educating others on intentional eating and overall wellness in order to renew and live our best life! She does extensive work with those suffering from specific-related diseases, hormone imbalances, anxiety, and depression. Her goal is to help guide people in understanding balance and what it means to eat and live intentionally for pure bliss, all while our bodies heal and flourish!

Heal+Thy Woman Project was born when she realized the immense necessity and lack-there-of in women’s health and education. For months she wanted to find a new word for “healthy”–being that “healthy” has lost its value in the every-day. She woke up one morning realizing her life’s passion is in the word “healthy”– “Heal Thy”. She believes that to be truly healthy we must first heal. She explains it in this way, “to have a healthy gut we must first “heal thy” gut”. Heal+ Thy Woman Project has become her sole focus to guide women thru healing and becoming more connected with their own beautiful bodies!
