Carrot Cake Reishi Muffins

HEALTHY, healing, nutrient-dense, non-bloating, energy-releasing, stress-reducing, cancer-fighting MUFFINS! We wake up every day blessed being able to make our own choices and each choice rewrites our “program.” I totally nerd out on the incredible connection between what we put in our body and how feel, both physically & emotionally. Imagine pumping your body with the good stuff daily. And especially starting your day off right. We all know carrots¬†are good for us, but here are just a few of the amazing benefits of REISHI Mushrooms:

  • Improves liver function & detoxification
  • Balances hormones
  • Balances blood pressure
  • Fights allergies and asthma

CARROT “CAKE” REISHI MUFFINS

INGREDIENTS

  • 2 eggs (or 2 flax eggs)
  • 1/4 cup coconut oil
  • 1 mashed very ripe banana
  • 1/2 cup raw honey (I use Bee Delightful USA)
  • 1 cup unsweetened applesauce, or 1 finely grated apple
  • 1 tsp cinnnamon
  • 1/2 tsp sea salt
  • 1/2 tsp baking powder
  • 2 cups grated carrot
  • 1 cup almond milk, unsweetened
  • 2/3 cup rolled oats
  • 2T REISHI (I use Four Sigmatic)
  • 1 tsp Ashwagandha (I use Sun Potion¬†)
  • 1/2 cup almond meal
  • 1 cup coconut flour
  • 1/4 cup raw walnuts

Directions:

  1. Preheat oven 375 degrees.
  2. Lightly oil muffin tin with coconut oil or ghee.
  3. Add eggs, banana, honey, melted coconut oil and whisk to combine.
  4. Next add applesauce, baking soda, salt, cinnamon and whisk.
  5. Add nut milk and stir in.
  6. Add grated carrots and stir.
  7. Mix in REISHI and Ashwagandha.
  8. Add oats, almond meal, coconut flour, and stir. Add more milk if you feel like you need it.
  9. Divide evenly in muffin tins.
  10. Top with crushed walnuts.
  11. Bake 35minutes.

Voila, CARROT “cake” REISHI muffins!¬† Store in a covered container to keep fresh. Heat before you eat them to soften them back up.

Desiree extended her nutrition education at The Institute for Integrative Nutrition where Health ReMynted was born simply means “renewing one’s health.” She has been lovingly coaching and educating others on intentional eating and overall wellness in order to renew and live our best life! She does extensive work with those suffering from specific-related diseases, hormone imbalances, anxiety, and depression. Her goal is to help guide people in understanding balance and what it means to eat and live intentionally for pure bliss, all while our bodies heal and flourish!

Heal+Thy Woman Project was born when she realized the immense necessity and lack-there-of in women’s health and education. For months she wanted to find a new word for “healthy”–being that “healthy” has lost its value in the every-day. She woke up one morning realizing her life’s passion is in the word “healthy”– “Heal Thy”. She believes that to be truly healthy we must first heal. She explains it in this way, “to have a healthy gut we must first “heal thy” gut”. Heal+ Thy Woman Project has become her sole focus to guide women thru healing and becoming more connected with their own beautiful bodies!
